Potatoes Malliga

This was created for a friend with no cooking skills and very little time! It has become a favorite in my home!

Plant-Based Option: (look for *PB in the recipe)

Ingredients

2 large potatoes, scrubbed and cut into 3/4″ cubes
1 tsp cumin seeds, optional
oil, as needed
salt to taste
1 tsp or more, curry powder/masala of your choice (I use Malliga, my personal blend which I no longer sell; hence the name of the dish 😊)

Directions

Heat oil in heavy-bottomed skillet. Drop in all ingredients except the masala. Stir fry over medium high heat, stirring occasionally  till potatoes are crispy on the outside and soft on the inside. (*PB—air fry or bake)

Remove from heat. Toss in curry powder while the potatoes are still hot. Serve immediately.

For added zest, garnish with the following mixture: 1 Tbsp chopped onion, 1 Tbsp fresh cilantro, 1 pod of garlic, crushed, and a dash of lemon juice.
