Coriander Beans

I’m experimenting with beans in an effort to get more protein in my diet. Here is one where coriander takes the front line of flavors, with cumin and turmeric right behind it. I even have a lazy quick version 😊

Ingredients
1 tsp oil or 3-4 Tbsp water/broth to sauté
1 medium onion, chopped
1/2 tsp turmeric
3/4 tsp cumin powder
2 tsp coriander powder
1/2 cup cilantro, chopped
1 medium tomato, chopped
1 whole green chilli or jalapenõ pepper (optional; leave it whole or chop for a bit of heat)
2 cloves garlic, minced
2 cans kidney beans, rinsed and drained (substitute with any bean of your choice)
1 + 1/4 cup water
salt to taste

Directions
On stovetop or in and Instant Pot: Saute onions in oil or water/broth till slightly brown. Add turmeric, cumin, and coriander; stir for about 30 seconds. Add tomato, green chilli, garlic, and 1/4 cup of water. Cover and cook on medium-low heat till tomatoes are mushy. Add beas, water, and salt. Bring to a boil and simmer for 20 minutes, adding more water as needed to suit the consistency you want. (If using an Instant Pot, set on high pressure and cook for 5 minutes)

Quick Version
Place of the ingredients in a pot, bring to a boil. Simmer for 20-30 minutes. (If using an Instant Pot, set on high pressure and cook for 10 minutes)

Serving Suggestions
Good with brown rice, quinoa, or flatbread.
