Goya Beans

My new NEWSTART lifestyle include beans in every meal. This is an easy one-pot recipe I created with Goya seasoning which adds an interesting orange hue to the dish!

Ingredients
2 cups black-eyed peas * (soak for at least 5 hours if making it on the stovetop; use as is if using an Instant Pot)
3 cups water
1 medium onion, chopped
1 cup salsa
2 cloves garlic, chopped
4 packets Goya Sazon Con Culantro y Achiote**
1 medium zucchini, finely chopped (optionnal)
salt to taste

Directions
Throw everything in a pot and cook till beans are tender. Add more water if needed for stove-top cooking. If using and Instant Pot, cook on high pressure for 20 minutes.

When beans are cooked, add zucchini and simmer till tender,

Serve over rice, quinoa, or any grain.

* If replacing black-eyed peas with another type of beans, soak overnight.

** This contains MSG. An alternative option would be mix of 2 parts garlic powder, 2 parts cumin, 1 part coriander, a handful of chopped cilantro, and lemon juice to taste.
