Ginger and lime are the stars of this flavor palate. Plus, so easy even for the most amateur of cooks.
Ingredients
2 Tilapia fillets, about 8-10 oz each
2 tsp coriander powder
1 tsp chili powder (I use Kashmiri for its bright red color and mild flavor)
1/4 tsp turmeric
1/2 tsp cumin
1/4 tsp dry mustard (optional)
1/4 tsp fenugreek powder (optional)
1 tsp grated ginger
2 tsp lime juice
1 Tbsp water
salt to taste
2 Tbsp olive oil, if cooking on stovetop
Directions
Mix together everything, except fish and oil. Taste and adjust salt and lime juice as needed. Cover fish with the spice mix and marinate at least 20 minutes (or for up to 24 hours refrigerated)
Heat oil in non-stick pan. Place fish in single layer. Cover and cook over medium heat for three minutes. Turn fish over. Cover and cook for another 3 minutes or till done to your liking. Add garnish the last 30 seconds of cooking. (Healthier option: Grill without oil or bake)
Garnish:
Mix together 1/4 cup sliced onions, 1/2 green chili, seeded and sliced, 2-3 slices lime, salt to taste
