prepared cupcakes with a box of yellow cake mix
½ cup melted butter
3/4 cup water
1 ¾ cups confectioner’s sugar
½ cup cocoa powder
1/4 tsp salt
1 tsp vanilla
2 cups desiccated, unsweetened coconut

In a deep bowl microwave water and butter till water is hot and butter is melted. Stir in sugar, cocoa, salt and vanilla. Mix well. Cool. Dunk cupcakes one at a time in cocoa mixture. Make sure the entire cupcake is well-coated. Roll cupcake in coconut. (I rinse my hand after every cupcake to keep the coconut from the cocoa mixture)

Makes about 18  cupcakes made with one box of yellow cake mix
